The most important guidelne for diagetics is to follow your diet. My younger brother literally ate himself to lossing both legs and renal failure. He is spending the rest of his life in a nursing home. He is only 53.
All of the things tha are important for all of us: eat a healthy lowfat, low carbohydrate, high fiber diet. All sugars (sweets) and complex carbohydrates (pastries) are to be avoided. Eliminate red meat and greasy meats. No fast food. Regulaar Exercise. maintain appropriate weight. Many adult onset diabetics can mangage thir blood sugars by diet alone. It takes a srtong will and perseverance. but the benefits outweigh the consequences of not taking care of yourself.
Even if the diabetic is on insulin or an oral hypoglycemic drug diet is of the same importance. |

I believe finding the causes of your diabetes (if you have diabetes) is also important.
Is it caused by obesity? viral infection? or is it genetic?
Plus, besides watching your diet, exercise is also extremely helpful. I have known a few people whose diabetes was cured. |

Genetics play a part in diabetes. But managing diet and weight can help prevent the onset of Type II diabetes. Anyone with a family member with diabetes is at risk.
Obesity also plays a role. Many of the obese are not watching their diets or exercising.
As Americans become heavier the incidence of diabetes increasses. |

Ampalaya (bitter melon) Pickles
You will need:
Vegetable Mix:
2 medium sized Ampalaya (bitter melon) seeded
1 medium sized onion, thinly sliced
1 small carrot, sliced
4 cloves of garlic
Pickling Solution:
1 cup vinegar
1/4 cup water
6 tbsp sugar (or sugar substitute)
1 tsp fine salt
Directions:
1. Wash Ampalaya. Cut in half lengthwise to remove pulp and seeds with spoon. Slice into 5mm thickness.
2. Mix in 2 tbsp. salt. Rinse after 15 minutes Drain well.
3. Combine carrots, onions, and garlic.
4. Prepare boiling solution by boiling vinegar, water, sugar and salt. Set Aside for it to cool down. Note* When sugar substitute is being used instead of sugar, add sweetener only during the cooling period.
5. Pour pickling solution over vegetable mixture. Toss.
6. Place in a jar. Serves best when cold as a side-dish.

Grilled Seafood Salad
What u will need:
6 pcs. medium shrimp, peeled and deveined.
1/2 cup squid, cut into rings
1/4 cup fish fillet (white meat)
1/4 cup mussels
1/4 cup ampalaya (bitter melon), seeded and sliced
1/4 cup cucumber, sliced into bite size pieces
1 small onion sliced
Lettuce leaves of your choice
Dressing:
6 tbsp. red wine vinegar
2 tbsp. lemon juice
1 tsp. extra-virgin olive oil
1/4 tsp sugar
a pinch of salt and pepper
Directions:
1. Grill the shrimp, squid rings, mussels and fish fillet.
2. Combine all ingredients for the salad dressing. Stir well.
3. Prepare sliced veggies into a bowl.
4. Toss in cooked seafood and add dressing. Serve immediately. |
